During the week my boyfriend, Zak, and I do our best to eat a good portion of our meals low carb/ketogenic in an attempt to eat a little healthier. We are carb lovers through and through, but admittedly, the carbs don’t always love our bodies back! So, for week days we try our very best to commit to eating more protein, veggies and healthy fats which is why we need a go-to collection of easy low carb dinner recipes.
But, I’ve found that preparing low carb dinner recipes can sometimes take longer in the kitchen to prepare. And often these recipes includes some additional steps than just popping some rice in a rice cooker and letting it go. Anybody who has made a spaghetti squash recipe knows what I mean! While I love the result of those low carb dishes, a lot of us just don’t have the time for that during the week.
Yes, I am a foodie and want my dishes to be tasty, but I also strive for an hour or less in the kitchen. I’m fairly good with my knife skills, so I can normally get my veggies prepared within 15 minutes. If it takes longer than 30 minutes to prep, I’ll save those for extra special nights that I have more time (which doesn’t happen very often).
